<p>You can have tender BBQ pork chops each and every time you barbecue if you take a few extra steps in your preparation. It really is that easy. Oh my goodness, most people think pork chops have to be dry and flavorless, but the reality is so much different than that.</p>
<p>* two pork chops<br />
* 1/4 cup plus 1 tbsp. lemon juice<br />
* 3 tbsp. soy sauce<br />
* 1 tbsp. extra-virgin olive oil<br />
* 1/2 tsp. light brown sugar<br />
* 1/4 tsp. fresh or dried rosemary<br />
* salt and pepper to taste</p>
<p>Now I did not put garlic in there, but if you ask me garlic goes in almost everything so I would add some chopped or minced garlic to the marinade. You want to bring home the best that you can afford, not cheap pork chops. Pork loin chops are the ones that are the most tender, but sometimes the T-bone chops will work just as well.</p>
<p>And do not buy thin, thin, thin, thinking that you are going to save money. The flavor, taste, and texture will not be there. It does not pay to scrimp sometimes and this is one of those times. Then you will have people eat these and they will be turned off to pork thinking all pork chops are the same.</p>
<p>And That Is Simply Not True!</p>
<p>Trim off all of the extra fat and place your chops in a ziploc bag to marinate in. Thick chops, at least one inch thick. Chill your pork chops for at least one hour. Remove them and place on a plate and let them come to room temperature for about 35 minutes or so. Preheat your barbecue to high.</p>
<p>For tips on getting that high temperature on your grill and keeping it clean you can check out our opt-in newsletter where we have a lot of barbecuing tips and hints. Now for the tender BBQ pork chops, take them to the high heat portion of your barbecue and grill them for about 6 minutes, turning them halfway through. Then you can move them to a cooler section of the grill to finish cooking. Cook/barbecue/grill them for another 6-9 minutes.</p>
<p>When they are done, the juices should run clear as in chicken. And of course you can always use your instant read thermometer. And this is how you have tender BBQ pork chops which you have grilled on your barbecue. It is that easy. The Pork Foundation recommends that your pork chops are done and can be pulled at 160 degrees internally so you are safe if you follow their directions.</p>

<p>People used to question the nutritional effects of barbecuing because they were concerned about the fat content of traditional barbecue fare like hot dogs and hamburgers. That concern is valid, but it&#8217;s easily avoided by substituting skinless chicken and fish.</p>
<p>Unfortunately, researchers say there is still another concern about the health impact of barbecuing any animal meats; when they are cooked in the intense heat of the barbecue, substances are formed that have been clearly shown to be carcinogens (substances that can start the development of cancer). And these substances develop regardless of whether low-fat or high-fat, red meat or white meat is on the grill.</p>
<p>In a landmark report on diet and cancer risk, the American Institute for Cancer Research (AICR) notes that as meat &#8211; red or white &#8211; is cooked, natural substances that it contains react under intense heat to form compounds called heterocyclic amines (HCAs) that have been linked with increased cancer risk in some animal studies. The longer the cooking time and higher the temperature, the more these carcinogenic substances formed.</p>
<p>Studies in the Journal of the National Cancer Institute have shown that people who frequently eat heavily browned or very well done meat are three to five times more likely to develop breast, colon and stomach cancer than those who eat it less often. Studies of rodents demonstrated that these HCAs are distributed to mammary (breast) tissue and cause changes in a cell&#8217;s genetic material. However, we don&#8217;t have proof that this process occurs in people.</p>
<p>Does this mean that if you care about your health you must banish the grill? Not necessarily. Researchers note that how people barbecue affects the risks. For example, marinating meat or poultry even briefly before cooking reduces the amount of HCAs formed by about 96 percent. Partially pre-cooking meat for two minutes in the microwave just before grilling prevents 90 percent of the HCAs normally formed.</p>
<p>Avoid the black char that often forms during grilling, since it is particularly concentrated in cancer-causing substances. Other carcinogens of concern come from the smoke. You can limit the meat&#8217;s contact with smoke and decrease this risk if you raise the grill a little higher from the heat and choose leaner meats and trim all visible fat so it can&#8217;t drip and cause smoking. Placing food in a foil packet also prevents smoking.</p>
<p>The rest of your meal can reduce the risks of grilling as well. Antioxidant vitamins and phytochemicals in fruits, vegetables and soy foods seem to block some of the damage HCAs do to cells. Studies from Oregon State University demonstrate that substances in tea increase the body&#8217;s ability to detoxify and excrete HCA before they do their damage.</p>
<p>Look at the overall balance of your meal. AICR recommends that at any meal, animal protein like meat, poultry and seafood should occupy no more than a third of your plate. And that&#8217;s especially true when it&#8217;s grilled. By limiting your meat portion, you limit your exposure to HCAs and other carcinogens. And by enjoying a healthy portion of fruits, vegetables and whole grains, you get loads of cancer-fighting, health-promoting nutrients and phytochemicals. If you want to grill some of these veggies, that&#8217;s no problem, since the HCA reaction occurs only in foods with animal protein.</p>

<p><strong>Chicken Legs and Thighs</strong> are the most eaten parts of the chicken, and for good reason since they are cheap to buy and easy to cook. But mostly because they are juicy, taste great, and have a built in handle.</p>
<p><strong>Directions:</strong></p>
<p>1. Make sure that the chicken has been rinsed completely before cooking, unless the chicken is soaking in a marinade.</p>
<p>2. Pre-heat the grill on med (240 degrees) and place the legs/thighs on the grill. Legs/thighs grill much better at a lower temperature for a longer period of time.</p>
<p>3. Frequent turning of the legs/thighs will insure a more even cooking, but will prevent any clear sear marks.</p>
<p>4. Legs/thighs come in so many sizes that it is hard to say exactly how long to cook in minutes. Start by letting the bottom side cook to a golden brown before turning. Continue turning as each side browns. If the outside is browning in only a minute or two than the heat is probably up to high and the outside will burn before the inside is cooked.</p>
<p>5. If juices are coming out of the chicken then you have cooked it through and it may start to become dry if allowed to cook much longer. You can make a small cut in the chicken at the thickest point to see if it is still pink in the middle. It is preferable to not make any cuts though, because this will break the seal and allow the juices to escape making the chicken dry.</p>
<p>6. Remove the chicken from the grill and allow to cool a little before eating. This would be a good time to brush on your favorite sauce.</p>
<p><strong>Safe Internal Temperature: 165 degrees</strong></p>
<p><strong>Tips:</strong></p>
<p><em>* Grilling legs/thighs at too high a temperature will burn the outside of the chicken without cooking all the way through to the inside.</em></p>
<p><em>* Grilling legs/thighs at too low temperature may prevent the outside from getting brown and crispy. The chicken may also be dry.</em></p>
<p><em>* Be careful if you brush bbq sauce on while cooking. The chicken may burn easier and flavor the chicken with a burnt charcoal taste.</em></p>
<p><em>* To get the full flavor of the bbq sauce wait until the legs/thighs are done cooking and then brush on the sauce.</em></p>

<p>BBQ chicken that has been cooked perfectly will taste delicious. Although it seems that with its increased popularity and careless manner of BBQ cooking, many people cannot enjoy this.</p>
<p>When the chicken has been barbecued improperly, it looks still pinkish in the center and burnt on the outside. Not only it will affect the taste but it also becomes unhealthy.</p>
<p>Here is a guide to BBQ chicken in a good way it can be enjoyed.</p>
<p>Things Needed:<br />
- Chicken pieces<br />
- Gas grill or charcoal grill<br />
- Brush for the sauce<br />
- Meat thermometer<br />
- Marinate<br />
- Rub or seasonings<br />
- Side dishes<br />
- Oven<br />
- Sauce</p>
<p>Procedure:<br />
Step 1:<br />
First, select the type of chicken which has to be barbecued. Legs and thighs are preferred by some while others like skinless and boneless chicken breasts. If barbecuing more than one chicken part is desired, then the cooking times would have to be adjusted. White meat like breasts and wings cook faster than dark meat like legs and thighs.</p>
<p>Step 2:<br />
Now, pick the grill which is desired to be used. This will rely on how one wants to cook the barbecue. This will also depend on the neighborhood one is living in plus the lifestyle. If a person is a beginner at grilling, then the gas type is recommended. However, this might not be easy to use during the holidays.</p>
<p>Step 3:<br />
The chicken has to be marinated. This process will allow the flavor to sink in to the chicken making it taste great after it is grilled. A marinate flavor can be selected as preferred. There are variations available from lemon pepper to teriyaki. If the chicken is marinated in the fridge, it has to be made sure that it is not left in there for more than 48 hours. At room temperature, it has to be leaving it for an hour.</p>
<p>Step 4:<br />
When the chicken has been marinated, it can be now rubbed with the seasonings. This will depend on the type of flavor which is needed to be given to the BBQ chicken.</p>
<p>Step 5:<br />
The chicken has to be pre-cooked by pre-baking. The ideal temperature for baking it is 360 degrees in the oven until partially cooked. This will seal in flavors and will ensure that the chicken has been cooked before it goes to the grill. Others do boiling. However, boiling takes away the flavor and makes it taste weak.</p>
<p>Step 6:<br />
Now the grill has to be made ready while the chicken is baking. If a charcoal grill is being used, ignite the coals and they should be left to burn until a white coating of ash appears on the coals. In case of gas grill, it has to be preheated to a medium heat temperature of 360 degrees. The grate also has to be sprayed.</p>
<p>Step 7:<br />
Put the seasoned chicken on the rack and cover it with the grill lid. It should be given at least half an hour to cook. With time, it has to be checked and turned after every five minutes for ensuring that it is evenly cooked. The pieces can also be rotated to balance the cool and hot spots on the grill.</p>
<p>Step 8:<br />
The BBQ has to be glazed again with the seasoning nearly 10 minutes before taking chicken off the grill.</p>
<p>Step 9:<br />
After grilling, the chicken pieces can be checked with a meat thermometer. The bone should be never touched when the thermometer is inserted. The internal temperature of the meat must be 175 degrees.</p>
<p>Step 10:<br />
Finally, the BBQ chicken is ready. It can be served with delicious side dishes like coleslaw, pasta salad, potato salads, baked beans and biscuits.</p>

<p><strong>#3. The moment you decide to put the sauce recipe on is extremely important!</strong></p>

I usually gently lay the ribs on the grill curve side down to coat. Your total BBQ grilling time will only be about six to ten minutes but you&#8217;ll be using the pattern of paste, grill, paste, grill, paste, grill. This pattern caramelizes the meat so it won&#8217;t fall off the bone premature.</p>

<p>I have received a lot of questions that just deal with the basics of barbecuing and I thought that I would answer a few of those. Sometimes we who have been doing this for so long might not understand some of the terms and words which we use. So I thought that I would address some of those issues.</p>
<p>Cooking Temperatures</p>
<p>One of the first things we should discuss is the range of cooking temperatures. There are really only three major ones&#8230;and of course, we have all the various ranges in between. But basically only about three big ones.</p>
<p>1) HOT!- This is above 400 degrees. You are not going to use this much. Sometimes you will so that you can have those nice grill marks on them, but then almost immediately you will take the meat to the medium or lower side to finish off what you are doing.</p>
<p>2) MEDIUM &#8211; 300 to 400 degrees F. This is the temperature where you will grill most items.</p>
<p>3) LOW &#8211; Below 300 degrees F. Your low temperatures are where we BBQ large cuts of meat like roasts, tri-tip, prime rib, etc. This is especially important where the meat has a large amount of fat.</p>
<p>A couple of side note about basics, we don&#8217;t need no stinking basics:<br />
* we really cannot sear the juices in on a BBQ grill. What we are doing is carmelizing the outside, and this really adds a lot of flavor so don&#8217;t knock it. Try not to get the two mixed up.<br />
* Other than smoking (and I don&#8217;t mean cigars or cigarettes) we usually do not cook at temperatures lower than 225 degrees F. However, smoking with your BBQ setup is a totally different post and we will get into that as time goes by.<br />
* try to always marinate the meat. Well, shoot, sometimes I even marinate my veggies in white balsamic vinegar &#8211; you want to talk about FLAVOR! But we are talking meat here, so marinate for a few hours on chicken if it has an acid in the marinate. Overnight for chicken is too much for the chicken will start to cook.<br />
* But on beef, pork, ribs, items which are not as delicate as chicken, you can marinate them overnight. This really adds to the flavor and taste.<br />
* Same on fish, only about an hour, or two at the most. The acid will start to cook the fish. Such as in ceviche.</p>
<p>That is enough for today and Basics? We don&#8217;t need no stinking basics! And I say we do if we want to do it right. Barbecue can be great and you will be known far and wide for your abilities with a pair of tongs. But done wrong and when people are invited over to your house for an outdoor BBQ you will be surprised at all the excuses there are in the history of mankind to beg off and stay away.
